Mango Chicken of Heaven

In exchange for your patience with me and this blog I have decided to reward you with a recipe. IT really is a reward you see because not only is it delicious and tropical but it’s also South Beach Diet, Phase 2, approved. It’s also in their orange cook book but I modified it a little because I’m cheap…as you’ll soon see…

Its one of our favorite go to meals especially when we are wanting some cilantro in our bellies.

So this is what you need:

First things first: Set your cooker to 450

Next: take the jalapeño pepper (or green hot pepper that you got because it was cheaper), a thick slice of garlic, half a yellow onion, salt, cayenne pepper, allspice seasoning, garlic, white wine vinegar (or a mixture of the two because that’s all you have), a little evoo and throw them in a food processor until they are really ground up.

Get your boobs ready…I always like to check myself when I have to prepare chickens. It’s a good reminder of what could happen to me if I’m not constantly checking my ladies…

Pat them down (the chicken boobs, not your own) and cover them on both sides with the food processor mixture.

Bake them in a pan for 30 minutes.

While they’re cooking take a bunch of cilantro and chop it up. Grab your mangoes…the fruits, not your chest and slice them up in to delicious strips.

Talk to yourself like you’re on the Food Network while you’re doing this.

Example:

Find out that your Hubs has taken a picture of you while you were playing pretend. Thankfully it was after you felt yourself up…that could have been embarassing.

We had a friend over that night…I’m not a boozer who needs three glasses just to get my fix of the liquor.

Oh right…the recipe:

Ok so once the chicken is done plate it with some scrumptious brown rice (or white rice for fatties that you live with who refuse to eat brown rice because they think it tastes like cardboard. ) You can also pair it with Quinoa which is a favorite grain of mine.

Top the chicken with the cilantro and add a side of mango and you’re good to go. May your bellies be happy forever and ever amen.

Oh and by the way…it is a tad spicy so you may want some H2O.
