First things first…I’ve been away…not traveling, just from this blog world. I’m every so sorry but I have two good reasons, no three…well really four. They are my two siblings-in-law who were here for almost a week, my sweet hubby, the Thanksgiving Baking Extravaganza, and the actual Thanksgiving Dinner. They basically took my life over!
But I’m determined to let you in on the exciting week we had so here is one of the many recipes that I cataloged last week.
This was my first Thanksgiving as the hostess.
This was alsom my first Thanksgiving to actually be in charge of cooking the turkey…and the chicken, and the veggie casserole, green bean casserole, sweet potato mash, cranberry sauce, pumpkin cheesecake and apple pie…not to mention the appetizers I had in store.
This was my first Thanksgiving in Chicago.
This was surely a thankful Thanksgiving!
It was definitely not restful as I had to open at the store and then race back to the house to begin all the cooking but it twas delicious!
But all good things have their share of bad. For instance, I baked several things, one of which was Jam Thumbprints.
( see those ones in focus there? Those are the culprits to my failed baking…I hate them)
For the record, I have baked them before.
Unfortunately my oven didn’t know that and then squashed all the non-nut ones to smithereens…sad but true.
I’ll walk you thru this recipe though, because even though I made a few mistakes, they are worth trying and it’ll become a Holiday staple in your house.
*** Side note*** Yes I said “Holiday” because I’m encompassing Thanksgiving and Christmas and New Years, not because I don’t believe in Christmas…because I do… and I love it…***
So calm down.
Anyways…where were we?
Right my failed recipe.
So here is how you work it:
Getchurself some 2 egg yokes, some 2 egg whites (yeah two eggs separated, way to work it)
You need some flour, some sugar, some salt, some jam (my most favoritest is the Red Raspberry with seeds…another fail as you can see in this picture) and some vanilla.
You’ll also need to store up some nuts, sugar, and coconut (what I was missing to make sheer perfection)
Sift yurself some flour and salt together:
And sift some more:
In a separate bowl, preferably of the pink variety because it’s nicer, beat the butter for 30ish seconds. Then add the egg yolk and vanilla. Beat till they are well integrated.
Then mix your dries with your wets. I did it in the pink bowl because there was enough space and I was flush with excitement.
You’ll want to scrape all the goodness down from the edges and then cover that bowl on up and throw it (or lightly toss it…maybe just place it) in your fridge for about 1 hour.
When that is done prep your oven at 350.
Now comes the fun part.
Roll the dough into 1″ balls.
Dip the in the egg whites and cover them with either chopped walnuts or coconut.
It’s ok to put the sugar on (which I did) but also add the other goods or else it’ll just plop down on your baking sheet…which is what happened to me…and it was incredibly sad.
Unfortunately I don’t have any “after” cookies because I was just so dissapointed but se la vi. they are still so delish and I promise you’ll not regret it.
I love the coconut ones, especially when the coconut burns a little on the edges…mm.mmm..good. Obviously I didn’t have any of that or else this would be a much more exciting post but alas…nuts are all you’re getting.
